When we swapped addresses in April 2024, we knew we had undertaken a big project.
We called in the cavalry and began work.
The walls were stripped of their plaster, revealing authentic glazed tiles underneath. If you’ve visited us before, you’ll know that they’re mainly white, with a strip of horizontal green. We couldn’t believe our luck! A strip of Bolly green was waiting for us to find. As though we were always supposed to move in.
We ripped up carpets and varnished floors. Arming them against inevitable beer drips and spills.
Our old hot liquor tank chimney underwent some repurposing and now houses the pipes (or beer python) used to pour through any of our twelve-keg beers. We also created the cold cellar space used to store live kegs and casks.
We reconfigured the electrics, and we dug out space for 55m of new drains.
The brewery operation took us 3 months to complete, and our first brew was on the 16th of May 2024.
Our lovely Taproom bar originally belonged to The Cask Tavern, our sister pub in Poynton. When the bar was dismantled (way back when), half was used by our friends at Green Earth Flowers, and the other half was put into storage. There was a chance discussion between both parties that unveiled that the bar could be reunited and find its forever home in the Taproom. And we’re so happy to have her back; she is quintessentially Bolly, after all.
